I’m not sure if this really counts as part of my New Year’s Resolution, but I think it should based on presentation alone. I needed an appetizer for Easter lunch, and at first I was going to go with leek and brie tartlets. However, I wanted something healthier, and something I wouldn’t mind having leftovers of. I have a special tool in my kitchen gadget arsenal that makes “v” shape cuts and I used it to cut all the way around a small “personal size” watermelon. I took a melon baller tool to scoop out all the flesh from both halves of the watermelon. Deciding to go with convenience, I bought a fruit platter that had pineapple, honeydew and cantaloupe. I had some strawberries at home that I cut the tops off of. Then it was as easy as assemble and ta-da! Easter Sunday appetizers that are pretty and healthy!
This is exactly what I’m going to do for a baby shower next weekend!
